Coeur à la Crème 'Tartlets'

Ingredients: 

  • 1 packet of Phillippa's Butter Shortbread 200g 
  • 1 packet of fresh goat's cheese - original, i.e Meredith's Goat's Cheese 150g 
  • 2 tbsp sugar 
  • 1 tsp vanilla essence 
  • 1-2 tbsp cream 
  • 1 punnet of berries, washed 
  • 1 zip lock bag 

Method: 

  1. Mix in a bowl goats cheese with sugar, vanilla and enough cream to form a smooth consistency that will hold it's shape when piped.
  2. Spoon into zip-lock bag.
  3. Snip a 1cm triangle off one of the corners.
  4. Lay biscuits out on a beautiful plate.
  5. Pipe some vanilla cream on to the top and finish with a whole or half berry. 
  6. Serve within a few hours. Can be refrigerated.
