Ingredients:
- 1 packet of Phillippa's Butter Shortbread 200g
- 1 packet of fresh goat's cheese - original, i.e Meredith's Goat's Cheese 150g
- 2 tbsp sugar
- 1 tsp vanilla essence
- 1-2 tbsp cream
- 1 punnet of berries, washed
- 1 zip lock bag
Method:
- Mix in a bowl goats cheese with sugar, vanilla and enough cream to form a smooth consistency that will hold it's shape when piped.
- Spoon into zip-lock bag.
- Snip a 1cm triangle off one of the corners.
- Lay biscuits out on a beautiful plate.
- Pipe some vanilla cream on to the top and finish with a whole or half berry.
- Serve within a few hours. Can be refrigerated.
