Whenever I serve Long Paddock Cheese people always say “mmmm what’s that?” It is distinctive and stands out with a lingering flavour that reveals itself as you eat it. This comes from their low-temperature pasteurisation, which retains a lot more of its flavour profile.
Ingredients:
300-500g radicchio, washed, chopped
180g long paddock blue cheese, diced 1cm square
1 firm ripe pear diced, in lemon juice
½-1 cup Phillippa’s Honey Orange roast nuts, chopped roughly
2 Tbsp chopped dill
1/3 cup Phillippa’s Honey vinaigrette dressing
Method:
1. Layer all ingredients except dressing in the order above
2. Just before serving, add dressing, salt and pepper and toss together,
NOTE: This can be stored for a few days in the fridge in an air tight container (leave dressing out if you want to store it)
