Cranberry Orange 'Tartlets'

Ingredients: 

  • 1 packet of Phillippa's Cranberry Shortbread, 200g 
  • 1 x 140g Philly cream cheese, full fat
  • 2 tbsp sugar
  • 1/2 tsp finely zested orange skin
  • 1-2 tbsp cream
  • 2-3 large pieces freeze-dried orange rings, cut into small segments 
  • 1 zip lock bag 

Method: 

  1. Mix cream cheese with sugar, zest and enough cream to form a smooth consistency that will hold it's shape when piped.
  2. Spoon into zip-lock bag. 
  3. Snip 1cm triangle off one of the corners.
  4. Lay the biscuits out on a beautiful plate. 
  5. Pipe some cream onto the top and finish with a segment of orange.
  6. Serve within a few hours. Can be refrigerated.
