Ingredients:
3 Quinces
170g Goats Cheese
200g Crème Fraîche
A pinch of salt
3 heaped tsps of vanilla sugar
6 Phillippa's Fennel & Almond Biscotti
50g Honey (for drizzling)
Method:
Pre-heat the oven to 180 degrees celsius
Peel and core the quinces then place in an oven safe dish and cover with foil
Bake for 1-2 hours or until golden
Once baked, mash quinces with a fork and put to the side
Mix in a bowl 170g of goats cheese, a pinch of salt, 200g Crème Fraîche and 3 heaped teaspoons of vanilla sugar
Place on a beautiful plate the goats cheese mixture and add the mashed quinces on top
With a mortar and pestle, crush 6 of Phillippa's Fennel & Almond Biscotti's and place on top of the quinces
Finish the dish with a drizzle of honey to taste
